Ramen is constantly evolving. The conventional ramen varieties shoyu, miso and tonkotsu ramen are already a thing of the past. Thanks to their harmless taste, however, these are still the most-seen varieties outside of Japan - also in this country.

 

But Sorihashiya is ahead of his time.

We see our task in presenting you with the latest trend, which is characterized by a rich and complex taste, and spreading it in Germany instead of outdated ramen.

 

Also, ramen that uses chemical additives to create unrealistic flavors doesn't meet the standards of traditional, authentic ramen in our eyes.

We are convinced that only natural ingredients and the passion of the chefs can give ramen real umami.

Soup

We value regionality and naturalness: instead of preservatives and flavor enhancers, we use natural ingredients from the European region.

After a painstaking trial and error process, we've finally arrived at a convincing soup.

Our Gyokai Paintan Soup is made exclusively from French chicken and Spanish fish. Again, we uncompromisingly strive for the best flavor and double the amount of chicken and fish for a bowl of ramen to create a rich soup.

Noodles with a firm taste and chewy texture that go well with the rich soup. For that reason, we blended German whole wheat flour, which has a strong flavor, and Italian wheat, which has a chewy yet firm texture. For the super-rich tsukemen soup, the noodles are cut a little thicker to bring out a stronger flavor and chewiness without overpowering the soup. Just like the soup, it does not use any additives, preservatives, or chemical seasonings, and is a noodle made only with wheat, water, salt, and lye water.
